Hot and Sour Soup Burpees

Makes enough for a family of four
You need 1 large bowl and 3 small ones… Ingredients • 2 Pkgs of Chicken Breast (6 breast total) Homone-free chicken breast • 8 Chicken Bullion Cubes • 9 Cups water • ½ small Mushrooms(Angie Omits-Mushrooms ICK!) • 6 Quarter-size slices of ginger root, slivered into tiny pieces(use ginger spice if you have no root-I grow it in my backyard) • 4 Cloves of Garlic Crushed or 4 Tsp of minced • 6 Tsp soy Sauce(reduced sodium) • ½ tsp Crushed Red Pepper • 2 T Oriental Sesame Oil • 1 Bunch Green Onions • ½ Cup Cilantro sprigs, chopped • 6 T Balsamic Vinegar • 4 T Corn Starch • 2-3 Eggs
1. Dice Chicken & put into bowl with Sesame oil…Mix and set aside 2. In a large covered soup pan, bring chicken bullion cubes, mushroom, ginger root, garlic, soy, pepper to boil over medium-high heat. Reduce to low, cover and simmer while preparing the ingredients. 3. Finely chop onions and cilantro and set aside 4. Blean vinegar and cornstartch together, set aside 5. Beat 2-3 eghgs in a bowl and set aside 6. Increase Heat under broth to medium high & return to boil. Add Chicken, stir constantly, but not too fast. Slowly Pour the eggs(like threads in egg drop soup) 7. Stir in Vinegar mixture 8. Stir onions and cilantro & cook til chicken is cooked through & soup has thickened slightly, about 3-5 minutes 9. ENJOY! Compliments to Coach Angie
*When you eat, measure Chicken first then fill bowl with broth & count as 2 Carbs and only 1 Fat. You will need toad more Carbs and Fat Blocks.! WHOO HOO *Angie eats this over broccoli as well!!!
